double wide on a full foundation...floor insulation

I was wondering if i can/should remove the blanket insulation under my double wide if it is on a full foundation that i plan on finishing off (will be heated livin space. This would be done so i can update water lines to pex, update sewer lines etc. As of now the basement is very humid in the summer with water drippin off the black plastic that contains the insulation. I'am hoping it will be less humid when i put 2" foam insulation boards on the basement walls.
